The unopened flowers of the cassia (cinnamon) tree. Picked just before blooming, then dried in the sun. Their flavor is close to cinnamon but with more of a floral, winey scent. They are commonly used for pickling and mulling spice blends.

The first edition of the Encyclopaedia Brittanica described alum as "a peculiar kind of salt, sometimes found pure, but oftener separated from several substances...in England, from a whitish or bluish stone, called Irish Slate." (EB - v.1, 129)

Salts for kitchen or table were described depending on its source. Sea salt was retrieved from the ocean.
